Chocolate Cake
1 box of your favorite off-the-shelf chocolate cake mix
1 container of frozen orange juice
1 bag of slivered almonds
Chocolate frosting

Fully defrost the frozen orange juice (do not add water, you want it to be thick like syrup). Follow the directions on the box for the cake. However, instead of adding water to the mix, add the defrosted orange juice. Bake as instructed (Check the center of the cake with a toothpick. Due to the thicker consistency of the batter, it may take just a bit longer to bake). Cool completely. Frost the entire cake generously. Use the slivered almonds as a garnish on the outer edge of the cake. Don’t be shy – add a lot!

NOTE: This cake can be made with any frozen juice. How about Cherry or Lemon? The possibilities are endless.

Limoncello Trifle
Ever since David and I started making Limoncello this has been a family favorite. Make sure you have a pretty, clear bowl or better yet a trifle bowl to serve it in. This is as pretty as it taste.

1.5 lbs strawberries
.5 lbs raspberries
.5 lbs blueberries
2 loaves trader joes lemon tea cake loaf
1.5 jars trader joes lemon curd
1 pint heavy whipping cream (don't by cool whip)
2 cups+ of limoncello
fresh mint

Wash and trim all your fruit. Cut strawberries into small bite sizes. Cut the tea loaves into 1/2 inch slices. Whip the heavy cream very stiff. GENTLY fold 1 and 1/2 jars of the lemon curd into your whip cream. Do not use an electronic mixer for this step.

Cover the entire bottom of the bowl with lea loaf so that you can't see the bottom of the bowl. Generously sprinkle limoncello over the tea loaf (you want it covered, but not soggy). Add a layer of the whip cream / lemon curd mixture, add a layer of mixed fruit. Repeat until you reach the top of the bowl. I like to end with fruit as the top layer and top it with fresh mint. Serve with limoncello shots. NOTE: Cover with plastic wrap and let it chill in the fridge for at least 2 hours before serving. I like to make mine in the morning for dinner that night. Leftovers are great with breakfast and a cup of tea the next morning!
